INGREDIENTS

For the Sponge Cake

  • 7 eggs
  • 140g caster sugar
  • ½ tsp baking powder
  • 190g plain flour

 

For the Strawberry Tea Milk Soak

  • 700ml milk
  • 1 x 397g can sweetened condensed milk
  • 3 Ahmad Tea Strawberry Sensation tea bags

 

For the Topping

  • 350g sweetened whipped cream
  • Fresh strawberries, sliced

Method

Step 1: Bake the Sponge

  1. Preheat the oven to 185°C.
  2. Using a stand mixer or electric whisk, beat the eggs and sugar on high speed for 10–12 minutes until the mixture has tripled in volume and is pale and fluffy.
  3. Sift in the flour and baking powder and gently fold until just combined.
  4. Pour the batter into a 25 x 35cm baking dish and spread evenly.
  5. Bake for 25 minutes, or until a skewer inserted into the centre comes out clean.
  6. Leave the sponge to cool completely.

 

Step 2: Make the Strawberry Tea Milk Soak

  1. Heat the milk in a saucepan until just reaching boiling point.
  2. Stir in the sweetened condensed milk until fully combined.
  3. Add the Ahmad Tea Strawberry Sensation tea bags and steep for 8 minutes.
  4. Remove the tea bags.

 

Step 3: Assemble the Tres Leches Cake

  1. Once the sponge has cooled, slowly pour the warm strawberry tea milk mixture over the cake, allowing it to absorb.
  2. Chill for at least 2 hours, or overnight for best results.
  3. Spread the sweetened whipped cream over the top.
  4. Decorate with fresh strawberries before serving.
