INGREDIENTS
For the Tea-Infused BBQ Glaze:
- 2 Ahmad Tea Mango Magic Black Tea bags
- 1 large mug (approx. 300ml) of brewed tea, cooled (steep for 3–4 mins)
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 2 tbsp tomato ketchup
- Dash of Worcestershire sauce
- 1 tsp lemongrass paste
- 1 tbsp honey
- 1 tsp chilli sauce (Sambal Oelek or similar)
- Zest and juice of 1 lime
For the Skewers:
- 400g large king prawns, peeled
- 500g diced bavette steak
- 1 tbsp root ginger, grated
- 1 orange and 1 yellow pepper, chopped
- 2 spring onions, finely sliced
- 2 tbsp fresh coriander, chopped
- Pinch of chilli salt
- Drizzle of olive oil
Method
- Simmer all the BBQ glaze ingredients in a small saucepan for 10-15 mins until reduced and slightly thickened. Set aside to cool before basting.
- Marinate steak and prawns in olive oil, chilli salt, ginger, and coriander for 20 mins.
- Thread onto soaked wooden skewers with peppers and spring onions. Grill or barbecue on medium-high heat, turning and basting regularly with the mango tea glaze until lightly charred and cooked through.
- Serve with extra coriander and a chilled glass of Ahmad Tea Mango Magic Iced Tea.
