Black Tea

INGREDIENTS

  • 3 eggs
  • 3 tomatoes, finely chopped
  • ½ onion, finely chopped
  • ½ green pepper, chopped
  • 1 tin borlotti beans, drained
  • ½ small carrot, diced
  • Garlic
  • Lemon (optional)
  • 1 courgette, grated
  • Flour
  • 1 tbsp chopped dill or parsley
  • 1 spring onion, chopped
  • Beef sausages
  • Turkish bread

Method

 

1. Prepare the menemen

Heat olive oil in a pan and gently cook the onion and green pepper until soft and fragrant. Add the chopped tomatoes and allow them to cook down into a rich, thick sauce. Crack in the eggs and softly fold them through until just set. Season lightly and keep warm.

 

2. Cook the borlotti beans (barbunya pilaki)

Warm olive oil in a saucepan and cook the onion, carrot and garlic until tender. Add the chopped tomato and cook briefly until softened. Stir in the borlotti beans with a splash of water and allow to simmer gently until rich and lightly saucy. Season to taste and finish with a squeeze of lemon if desired.

3. Make the courgette fritters (mucver)

Squeeze excess moisture from the grated courgette, then mix with egg, flour, herbs and spring onion. Season lightly. Heat oil in a frying pan and spoon in the mixture, flattening slightly. Fry until golden and crisp on both sides.

4. Cook the sausages

Cook the beef sausages in a hot pan or under the grill until evenly browned and cooked through.

5. Warm the bread

Lightly toast or warm the Turkish bread until soft and ready to serve.

 

6. Serve and enjoy

Arrange the sausages alongside generous spoonful’s of menemen, borlotti beans and golden fritters. Serve immediately with warm Turkish bread and enjoy with a freshly brewed cup of English Breakfast tea.
