INGREDIENTS

To make 9 buns

For the Filling:

  • 150g whipping cream
  • 2 English Breakfast Teabags
  • 200g Dark Chocolate
  • 1/4tsp Sea Salt

For the Dough:

  • 2 English Breakfast Teabags
  • 220g Milk
  • 400g Bread Flour
  • 40g Sugar
  • 60g Condensed Milk
  • 35g Softened Butter

Method

For the filling: 

  1. Heat the whipping cream and teabags in a saucepan. Once boiling turn off the heat.
  2. Let steep for 5 minutes
  3. Pour the hot cream over the chocolate and add the sea salt
  4. Melt the chocolate
  5. Once melted, place plastic wrap so it is touching the surface of the ganache and refrigerate for at least 4 hours.

 

For the dough: 

  1. Heat the milk and teabags in a saucepan. Once boiling turn off the heat and let steep until cool.
  2. In a stand mixer, combine all ingredients except for butter and mix on low for 10 minutes.
  3. Add the soften butter and mix on low-medium speed with the hook attachment until dough comes together. This should take around 10-12 minutes
  4. Divide the dough into 9 portions and roll into balls.
  5. Flatten the dough balls and add the chocolate filling to the centre
  6. Gather up the edges and seal, make sure the bottom is tightly closed.
  7. Shape into round balls and place dough into the prepared pan.
  8. Cover and let rise until doubled in size.
  9. Bake at 175c for 20 minutes.
  10. Decorate buns with chocolate and serve warm.
