In honour of Her Majesty the Queen's Platinum Jubilee, mixologists at Ahmad Tea have created this delicious tea infused cobbler mocktail recipe combining the citrusy notes of the Queen's favourite tea blend, Earl Grey, with tangy pink grapefruit. The quintessentially British blend of aromatic bergamot with high quality black tea.

Earl Grey

INGREDIENTS

  • 75ml Pink grapefruit juice
  • 50ml Earl Grey tea (brewed and cooled)
  • 25ml Honey syrup
  • 15 ml Earl Grey tea syrup

To Garnish

  • Pink grapefruit wheel
  • Sprig of rosemary

Equipment

  • Stemless gin glass
  • Jigger
  • Sharp knife
  • Bar spoon

METHOD

For the Earl Grey syrup:

  • Brew 4 earl grey bags in 100ml of hot water
  • Measure 100grams of white caster sugar into a pot
  • Pour tea into sugar and bring to a boil
  • Boil until sugar is dissolved
  • Cool then pour into a container and keep in the fridge


For the honey syrup:

  • Pour 100ml of hot water into a pot
  • Add 100ml of honey
  • Boil until incorporated
  • Cool and pour into a container and keep in the fridge


For the Pink Grapefruit and Earl Grey Cobbler:

  • Chill glass in freezer
  • Fill glass with small ice cubes
  • Measure all ingredients into glass
  • Briefly mix to incorporate all ingredients
  • Garnish with grapefruit and rosemary
